I had the most delightful end to my work day!  I finished seeing my last patient and drove 17 miles to help out Alfred.  The Giotto Premium is a sight to behold!  ("Thou shalt not covet thy fellow-home roasters equipment," kept going through my head.)  I was curious to see if a $1400 machine made that much difference.  YES you do get what you pay for.  I pulled some of my best shots EVER.  By the way Jim, we used the Panama Mama Cata and the Brazil Poco Fundo blend 15 sec into second crack.  Words cannot describe this nectar of the gods!  We pulled some double shots that were 75% crema.  When the shot glass was held up to the light it gave off an effervescent cascade of a ruby waterfall in the glass.  The cup was silky smooth.  It was sweet with a very nice caramel flavor coming from the Brazil followed by wonderful chocolate and floral flavors from the Mama Cata, but no bitterness or stinging acidic taste.  Alfred has a hottop on the way.  I think he is not only dialed in on

 machine, but has seen why homeroast is the only way to get a superior cup of coffee.

Of the four parameters I was using all were wrong.
Mazzer setting: Way too fine
Pre roasted beans from Starbucks    Terrible 
Les brought his own beans which he roasted at home
My tamping technique on a scale of ten    A two 
Needed a lighter tamp and level grinds then a 360 polish
I'll leave his opinion on the quality of the Giotto Premium to Les.
The result;
Crema, the like of which I have never seen
Taste    Molto bene!
Oh by the way he makes tampers too! 
Mine is a beauty.

Mea Culpa on the Charbucks.Just waiting for my Hot Top to arrive next
week.Tried popper roasting but Les says I have the wrong popper.  All had a
raw acidic taste

You don't want to try a Giotto Premium.  Miss Silvia would never forgive you! because the pocketbook would be $1500 lighter.
