Well, thanks to Susan and the Postal Serviced, I have just roasted my first "aged" ISH. It took a while to arrive, but it came. I divided my 130 grams into 70 gram and 60 gram batches and roasted the 70 gram batch in my HWP. I was stunned at how fast first crack came...like after 2 min 45 seconds rather than 4-4:30 (My temp was 430 degrees). Second was much slower in arriving. I remember that the beans roast "darker" than average...so hope that i did not go overboard when i stopped the roast at 6 min 25 secs. with small signs of oil..which were no longer than after cooling. At 5:45 I had reached 485 and a powerful smell hit me. Maybe i should have turned it off right then.... I roasted inside my little guard booth where i was on duty...There i hear and smell much better. Also roasted what should be a fine Puerto Rican, compliments of Michael Walls...many thx Michael.
