Topic: Alfred's first roast (3 msgs / 44 lines)

I sampled Alfred's first Hottop roast today.  It was a fine Columbian, and he did an excellent job of pulling a nice double shot.  His roast was a little dark, but well within an acceptable range.  My question is, "How come Alfred who is at the beginning of the learning curve can roast better that the Big Boys?"  A few answers come to mind.  (1) Superior Beans.  Tom doesn't send out anything that isn't screened by him.  (2) Alfred cares.  He wants to roast excellent coffee.  (3) He has an open mind and is willing to learn and experiment.  (4)  He takes good care of his equipment.
