Back in Baltimore in the late forties the coffee in the fine restaurants =
was called Mocha Java.
They made it in a big coffee urn with a cloth filter. They would let the =
boiling water filter through and then pour it back and let it filter =
through again.
It was delicious!

Alfred,

That is called vacuum brewing. I have some vintage brewers. My daily brewer a Sunbeam that was made in the late 1930's This is a much preferred method of coffee preperation on this group. I vac brewed some of the Brazil "Cup of Excellence" this A.M. Please don't order any from Tom. I really want it to be around the next time I order! You know the stash is growing too fast when you haven't tried all the new coffees before the next SM order arrives!
