If you have a PID'd espresso machine likely stop reading! But for those of us with machines like a stock Miss Silvia this may apply. For a "cup of coffee" my standard has been a 5+5 Americano: 5oz double shot pulled in 25sec plus 5oz hot water. The pull pushes/exceeds the limit for Miss Silvia to maintain temp through the shot. Lately I've started the shot and 5sec into the pull flipped on the steam switch to "manually" turn on the heater leaving the steam switch on for 10sec (to the 15sec point) then turning it off. The heater usually then comes on, meaning temp going low, right at the very end of the 5oz pull. Seems to have improved the cup slightly. Similar method might be tried for the even smaller boiler machines out there. Just a thought!
