Could this be the same issue with the Nicaraguan? i.e. very dense and resists
roast? I've done a couple of roasts in my Z&D to what I thought was a Full City,
but after a 48hr+ rest, the results were very sour in the press pot cup.  Maybe
a popper would be a better attack for this bean?

Don't know about the Z&D but I roast quite a bid of the Nica FT.  I usually
do it to Full City...somewhere right before 2nd to 20 seconds in.  Usually
no oil.  I do it in a 1200watt pumper with 300 @ 4, 400 @ 10, 425 @14
minutes.  It's great right out, but IMO hits it's peak at 36-48 hours.
