As one of the winners of Jean's tradition offering I now owe the List an
offering. Once upon a time someone had an excess coffee related item they
offered to List with the stipulation the recipient must offer something
coffee related up in return. Problem is, what do I have that is coffee
related that I don't need! A while back I'd thought to offer up the electric
Regal hotpot we bought in an emergency while down in Fort Bragg, CA visiting
family a couple years ago. Motel was supposed to have a nuker and didn't so
needed it for heating water for Press pot. Later got the cool Bodum that
lifts off the corded base. Turns out it came in quite handy to have both at
the PNWGII so I won't be offering it.
Oh sure, there's always Kona. How boring. I just gave away three 1/2# gifts.
(boring as a tradition giving to me anyway.)
So I thought I take it a bit sideways. I'm offering one dozen Kona Mocha
Cocoa Nib Pecan Oatmeal Cookies. First batch in the oven as I speak. What  I
usually do is pre-freeze then vac seal in two's and return to freezer for
longer term later use, taking to the beach etc. I'll make up a dozen vac bag
for the winner. (Oh, if you don't freeze them before vac bag sealing you'll
end up with very flat cookies:-)
Recipe:
1c butter
1c white sugar
1c dark brown sugar
2 eggs
1t vanilla extract
3oz = 2 double ristretto shots Vienna melange roast Kona
2&1/2c flour
1c stone ground oats
1c steel cut oats (ran out of stone ground, will just be chewier)
1/2t salt
1t baking powder
1t baking soda
6oz 15min Rosto roasted Venezuelan Ocumare Criollo cocoa nibs
9oz Devine Ghana 70% Dark Chocolate cut in chunks
1c chopped pecans
Preheat oven to 350f. Cream butter and sugars. While creaming mix middle dry
ingredients in separate bowl. (unless creaming by hand then you figure it
out). Add eggs to creamed sugar & butter one at a time until blended, slowly
add the two cooled ristretto shots and vanilla. Fully blend. Slowly add the
mixed dry indgredients until just well blended. Fold in the nibs, choco
chunks and pecans.
Bake at 350f for about 13&1/2min. That's the time with our Viking gas oven
with convection fan on. Makes one LARGE cookie. No, no I mean spoon by
heaping healthy tablespoons onto cookie sheets... makes as many as it makes.
Depends how much of the killer dough you ate!
I've made these before using Scharf' nibs, before AlChemist got me in his
claws, and they were excellent. I really look forward to this batch! Just
put another pan in the oven (and a bit of dough "missed" the pan
again...YUMMM:-)
Now back to them thar babybacks about finished.
