Dave,
You autotune with a sample of beans being roasted to a temp that you 
specify( I used 390 F) and the controller learns by heating up and 
cutting the heat and then heating again. It takes a few minutes and 
generally the sample is thrown away. There is still oscillations in the 
heating cycle to maintain the profile thru out the desired roasting 
cycle but it was  much better than adjusting with the variac from my 
experiences. The inlet temp roasting that Jim Schulman recommended to me
solves the problem of the oscillations.
