On alt.coffee, a thread came up about the Italians adding a pinch of salt 
to the grinds in the portafilter. Cooks have been known to soak beans in 
water with salt or sodium bicarbonate to reduce the gas producing elements.
Now, taking these two practices, do youse guys think that adding either 
salt or baking soda might help to sweeten the spot? Or perhaps 5 minutes 
wouldn't have that much of an effect...?
Just a thought....

When I started watching my dad make coffee (around 1950), he added a
pinch of salt to the grinds in the drip pot.
He said this made it less bitter.  Of course he was using Foulgers, or
maybe Maryland Club.
