For cleaning metal parts at work, we use a rumbler filled with detergent and
small different shaped stones.
You can use any espresso machine cleaner and soak it for 1 hr. it will
dissolve most of the stains and it comes out nice and shinny. I really don't
think at the temperatures that the drum is subjected to, really needs to be
cleaned. I talked with our local roaster here in Anderson and he said that
he has never cleaned his Dietrich 12K roaster.
