We spent the yesterday with Debi's best friend Suzi and her husband Sam.
They were in town from Roy, UT for Sam's mom death. They came over 'bout 11
in the morning and left for Sam's sister 'bout 10:30pm. First thing made
them Bali Shinzan Americanos and offered some home made almond biscotti to
go with. Suzi's watching her sugar intake but took one piece anyway. (I've
been sending them home roast a few times a year for 4 years so they knew
what to expect coffee qulaity wise.) Since that biscotti batch almost gone I
told her I'd try making a batch using Splenda. 'Round noon Debi & Suzi took
off to do what they do best - and the pair took off for Clackamas Town
Center!
Sam & I spent the afternoon popping over to CompUSA so he could pick up
another USB mem stick and then returned for some PB samiches for lunch. He'd
never made biscotti so watched while I made pineapple coconut macadamia nut
biscotti subbing Splenda for the sugar. (Using Randy's base recipe with
pineapple extract instead of vanilla, 1c fine chopped toasted mac nuts and
1c unsweetented coconut added to dough at end. As anticipated adding the raw
dried coconut made the dough too stiff and required adding some liquid -
added roughly 1/4c milk - just added a little at a time 'till reach desired
consistency) They turned out very good, eating one now (ok, make that second
one this morning:-) with a Pearlman's Estate Kona Americano.
Later while deciding what to make for dinner and debating whether to make
low & slow beef brisket stroganoff or twice smoked salmon open faced
sandwiches Sam mentioned he was having problems using his pasta maker back
home. So we made fresh semolina pasta noodles for stroganoff! (They have the
same Pasta Express machine we have, got it after we got ours)
'Bout 5 Debi & Suzi returned and hadn't taken time to each lunch so Debi cut
up some of my smoked cheeses for them to snack on with crackers while Sam &
I "slaving" away making pasta. Lots of other cooking play but I'll try and
wander to coffee stuff:-)
While eating dinner of that smoked low & slow brisket beef stroganoff, Pane
di Demola bread with a couple dishes of differently herbed EVOO for dipping,
Asian pear & spiced pecan weed salad with balsamic I asked if they wanted
Kona Mocha Cheesecake with Kona syrup or Kona Mocha Torte for dessert. Who
could decide! So two pieces of each came out of the freezer, one of each for
both couples. While they were defrosting fired up the Royal Balance brewer.
Sam declared "oh good, I was hoping you'd use that!" (They visited last
Christmas and saw it in action then for the first time.) (I also fine
chopped some of that Kona bitttersweet chocolate to sprinkle on top of the
whipped cream that topped the Kona Mocha Torte pieces.)
After dinner I asked if they wanted to try wokking some beans. Sam was
engrossed in a mind teaser puzzle but Suzi was game. (she'd given up on the
puzzle she was playing with:-) So I pulled out some KPC Kona Fancy and away
we went. Suzi had great fun. It was getting late and they are flying home
this morning so they needed to get back to Sam's sister's soon. They left
with the 2/3# Kona Suzi roasted and a couple pounds of greens to play with
at home. Sent them off with half the pineapple coconut macadamia nut
biscotti batch too of course. Oh yeah, forgot to mention the Thai Black
Sticky Rice pudding I also made and sent with for their breakfast this
morning-) BTW, it's not really black rice but purple!
Now off to finish fixin' brunch!
