Topic: New Roaster turns out some good coffee (36 lines)

So I had 2 more success stories in a row. Perhaps I have been roasting to
light. The brazil roasted 40 seconds into 2cd crack was EXCELLENT. Exactly
the way I like coffee. Rich (body? carmaly flavors?), long aftertaste,
great aroma and a bit of hard to define complexity (workin on that defining
part). Also had good luck with the Peru. I left the room and came back and
it was DARK DARK brown and shiny. Stopped the roast immediately. I think
2cd crack was already slowing. A good solid cup of coffee. I clearly need
to experiment more at this end of the scale.
I do have 1 problem however. Both of these brews tasted better when the
first oz hit the bottom of the pot (automatic drip) then the last. A
somewhat off taste was apparent near the end of the brew while the initial
taste was right on the money. I have been using hot water in my machine
(from the bottled water dispenser at work) and perhaps it gets too hot by
the end of the brew cycle? Anyway, will try cooler water and more coffee
per cup since the initial flavor was not overly strong.
Damn this is fun,
Eric (a bit wired) Fesler
