Good luck with your roasting. I know I love it.
I also like dark roasts. My favorites are Kona
peaberry (a personal taste that is often considered
blasphemous--how dare I roast an island coffee dark!),
Sulawesi Toraja, Kenya peaberry (the Kora was great,
the Tegu is good), and Tom's French Roast blend.
Lots of others roast to dark nicely, though frequently
at the loss of the origin characteristics. I wouldn't
recommend centrals, but most Indonesians, the Indian
coffees, the African coffees, all are full-bodies
enough to hold up to "charring."
Hope this helps.
