Topic: am i doing it right? (33 lines)

now having no thermometer yet (still looking), i'm judging it with
sight, sound and smell. i just want to check with you all whether i do
it right?
with my caffe rosto running on my household 220v current (i'm from the
far east), i usually get the full city plus (light sheen of oil, first
smoke appears) at around 8.5 min. the taste is very bright and less
complex.
when i + variac, i'm aiming for 12.5-13 minute roast (to get more
body???), i first turn it to 220v to get the beans moving, when it's
light enough to get going smoothly, i turn it down to 200v and leave
it there until the end of the roast, full city. very hard to hear, but
i'm sure that the first crack has ended and not entering second crack.
when i cool it down, i turn it to 160v to get it moves slower, to
retain heat??? bean looks a bit darker, no oil yet. after 2 min i turn
it back to 220v to really cool it down.
when i dump it out, roast very even, but still have some chaff
clinging on some beans. about 5-10 beans per roast. store in airtight,
and wait to taste it today.
comment and advise please.
