My first Homeroasted brew that is.  Just
thought I'd share my experience.

I used some of that darker batch I roasted
yesterday (guatemalen atilan, well into the second crack).  I brewed it
last night after 6 hrs rest.

Now check this out, here I am anxious to make a
good impression with the wife.  NOW I decide to actually read the
instructions that come on a box of Melitta Paper Cone Filters.  And it
shows how to fold two edges over. I guess that's to slow down the filtration to
allow longer water/coffee contact.  So I do that, and this is the first
time I fold these.  Okay now I grind my precious new coffee. How much? My
usual, NINE Tablespoons for 2 mugs!  That's about 18ounces water.  Yes
the coffee was STRONG! TOO TOO STRONG.

Then I check out one of my new coffee books and it
mentions using 2 TBL per 6 ounce serving. okay, for me that'd be 18/6=3
3x2TBL=6. I should use 6 TBL, NOT 9!  Whooo boy, no wonder it was
bitter.

See ya!
Stephen
