Maybe I hit them on a good day (or maybe their quality has gone down hill since then -- my visit was in '95 or '96). I didn't love Sant'Eustache (didn't even like it). The best city that I found for both coffee and food (in terms of consistency) was Bologna. We even ate at a cafeteria (to save money for the splurge meal that we were going to have that night) which ended up being one of the all-time tastiest meals I have ever had. There was a pork roast stuffed with asparagus that blew my mind.
When you are in Florence (if you eat pork), check out Antico Noe it is hole-in-the-wall sandwich stand that had great pork roast sandwiches (I am not normally a huge fan of pork roast as an fyi). It is well-known to the locals. So, it shouldn't be hard to find.
Best,
Edward
