Aaron,
I feel your pain Aaron!  I too was getting mixed results with my iRoast 
and voltage combination a few months ago.  Only, my voltage was running 
low so my beans were actually under-roasting.  YUCK!  I was so miffed 
that I had to throw down another $100 to get the voltage/heat situation 
squared away . . . but then again, I wanted to roast my coffee, and had 
already paid for the roaster!
To shorten a lengthy story, I picked up a Variac in late January and 
have been VERY pleased with the results.  Consistent roasting temps and 
times ever since -- and I've cleared up the voltage variance in my old 
Victorian house.  Yes, it sucks to have to throw down more $$ for yet 
another appliance, but in my situation, it was very worth it sheerly 
because it lowered my frustration level.
There's another part of this story which is about how INCREDIBLY 
helpful Tom and Maria were over at sweetmarias.  I'm one of the 
fortunate few who live in the SF Bay Area and are actually able to 
DRIVE over and pick up our orders, meet Tom and the crew, and talk 
through problems like this.  Tom took the time to watch my roaster in 
action there at the shop, then he handed me a voltage meter for me to 
test my line problems at home, then he replaced a batch or two of the 
green beans I had hopelessly under-roasted AND he hooked me up with 
some of his own roasted coffee (since none of mine was turning out too 
well.)  The short of it was this: after all the TLC I got from the crew 
at the warehouse, I didn't mind throwing another $100 down to keep my 
roasting endeavors afloat.  Way to go SM's!
