I bought a AMD64 box today.  While I was stuffing the computer into the 
trunk I noticed a new coffee shop and wandered in to see what they had 
to offer.   Wow - a barista who knew all the names of coffee plus some I 
didn't.  He ground, dosed and tamped my double and started to pull the 
shot.  He grumbled and said "missed" poured the shot in the sink, 
apologized and knocked the puck out - steamed and wiped the filter and 
started again.  They use a timer to pull the shots and he was pulling 
too fast.    The second shot was served in a warmed cup and it was 
fabulous.  It turns out that they roast their beans every night.     He 
pulled up a chair and we talked coffee for awhile.  I gave him the URL 
for Sweet Maria's and told him about this list.  I'm hoping that Serge 
shows up - we could use an Italian born and trained barista on the list 
-    OH YEAH and he served me El Salvador CoE done perfectly without OIL.

Sounded like an all around excellent adventure and discovery. Dumped the 
first shot, sweet. Interestingly I just read this evening that the average 
barista in Italy has been at their job for over 10yrs. It's treated as a 
respected occupation.
