What do beans taste like when they get too old? I've
had a couple beans where there is a sharp salty taste
and they also happen to be at least a year old. I'm not
sure if that's the culprit though. I also have some
beans over a year old that taste very good.

They taste "baggy."  There is an unmistakable flaw in the flavor and it comes 
right out at you.  I was using old beans I got from a friend when learning to 
use my RK Drum for practice.  The darker roasts concealed to a higher degree 
their baggy character, but a City Plus was undrinkable.

we have3 had a few here on the list with a saalty issue. Maybe it's your system (physical, not coffee setup).
If the beans are only a year old on your end that is really no value for how old they actually are unless you got them from Tom.
