This is why you need to read Tom's writeups. Learn what= you like. Make sure you get a good order in. As I type I am drinking one of= the most awesome cups of vac brewed coffee out there. It is the last of the= Pacamara bean from last year. Tom is getting more in this week and I will b= e ordering. This stuff is so rich and smooth. It has some of the nicest lingering aftertastes of any coffee I know. The secret is letting it rest= for 3 days. There is a flavor explosion on the 3rd day and it holds its freshness for about 10 days after that as opposed to most that after a week= I can tell the flavor has faded. For those who like that chocolate flavor= you best not let the Pacamara get by you this time or you will be like Tom= from the Mid-Atlantic gathering lamenting one that got away. Let's see, tomorrow is my wife's birthday. My new Kenya from Sweet Marias will be here= , I have added 5 pounds of the Brazil Yellow Bourbon to the stash as well as= reinforced the supply of the award winning Kenya, so the stash is in good= shape until the Pacamara hits Sweet Marias. I was really working on stash reduction, but I think I'm going to have to= make another order soon. I think at one point on Saturday I commented that= Les is responsible for a lot of the money I spend at SM! How is the Pacamara as espresso? (People tell me that you can't assume that what's good as brewed will be good as espresso. I'm not sure why that is so.) --Robert On Sep 12, 2005, at 10:21 AM, Les wrote: <Snip> |
It is a little on the bright side. However, I don't roast anything real dark. I have had some great post roast blended Pacamara shots with going 25= % Pacamara, 25% Harar Horse, and 50% Uganda Bugisu. Maybe I will pull some straight shots of it tomarrow. This is a multi-part message in MIME format. It was said of last years El Salvador #12 was the bean for espresso = (according to our MIA friend Dennis Parham), and the #19 was best for = other brews. Just finished a press pot of the #19.... Hopefully Tom is = finding the variety that he had last year. peter |
