Cool, you're the first person I've come across with a pellet smoker and TEC
grill. Knowing you went from a Lil' Tex Traeger to a Fast Eddy 100 I'm
almost afraid to ask which TEC you have - one of Sterling Gs? I have the
(relatively) small Radiantwave and there have been a few times entertaining
a larger unit would have been nice. After almost two years with the TEC I'm
still amazed for instance how moist a grilled boneless chicken breast can
be. EVOO brushed and Cajun seasoned then high temp grilled (blackened) some
just the other night to go with Jambalaya... FWIW I usually toss some
pellets on the glass infrared surface right at the start of grilling, and
keep adding pellets during the grilling. They really go up fast with enough
smoke billowing to add a bit of smoke essence to even fast grilled rib-eye
on top of the excellent grilling char.
