the motherboard of my hearthware precision is dead - any idea what to 
do/ where could I get a new one? (I live in italy, where no 
hearthware customers service is available).

I am in the Z&D camp now but I am a former and occasional HWP user. I =

the US (115 volt) model but I would guess it is similar.  
I don't think Hearthware supports the HWP anymore. They sure don't have =
roast chambers.
I modified mine so I could control temperature. I got into the feed back =
control loop and connected a potentiometer to use as a temperature =
control.  I use a thermocouple probe into the beans to measure =
temperature and do profile roasting.
Used this way I don't think the electronics adds a lot of value. If the =
board is history the machine is still useful. You could make a control =
box where you control the heating element with a switch and the blower =
motor with a variable transformer (Variac) or a phase control lamp =
dimmer. The motor is a series wound universal motor which lends itself =
well to this type of control. You should arrange your switches so the =
heater can't come on without the blower running.
If you want to see the schematic of my mod I may be able to find that as =
well.
