I use these for birdseed and cat food, but I can't see as how they're  
any less airtight than ordinary ziplocs.

My problem, personally, is that the ziplocks that hold 10 lbs (from
various vendors) don't always last (the bloomin' zipper always seems
to break away from the bag on one side), they're amorphous things that
need to be in a box or somewhere, and by the time I have beans from
four or five coops, clubs, or suppliers, the mix of things is so loony
that I just have to consider normalizing it all to my own scheme.
I'm not worried about airtightness. That's one of the "schools of
thought." There are others. The wold howling at my particular door is
organizing the beans.  YMMV    ;-)

Ah. The largest quantity of any one variety I have is 5 lb., and the  
ziplocs SM supplies them in seem to hold up fine.

Of my several suppliers, I'll say that Tom's ziplocs are darned good
if not the best.

Well, a section of it anyway.
 From a thrift store I got a nice wooden cabinet with 5 large drawers, 
some shelves and doors. The drawers are about 24" wide 10 inches deep 
and 22" front to back.
They slide on those heavy duty metal roller slides. Nice.
Right now my stash is about 70 # and it is all readily available, easily 
slid into view. I just keep the greens in what they came in.
There is also room for the 60# of Horse I just ordered from Tom. (Along 
with the 11# Harvey order to check it out)
The scale sits on top of this chest,  bags and containers for roasted go 
on the shelves, as well as some SS bowls I use for handling greens and 
roasted.
Unfortunately it is not strong enough to hold the Mazzer Major. That 
needs a separate table.
BTW, the MM is still in negotiation for new burrs etc.
Looks like the seller will stand behind it :)

I totally agree!
I formally store my beans in either a mason jar or
flip-clamp-gasketed-lid-buy-'em-anywhere glass containers.
I am finding the ziplocks are just more convenient to squeeze the air out of
and zip shut.  For roasted beans, the one-way valve just keeps on purging.
