I use water just off the boil--at home, from my Pasquini's tap, on
the road from an electric kettle. I think the hotter water coupled
with a fresher roast ground immediately before brewing will produce
the bloom of which you speak--necessitating a slower pour and a five-
second wait before stirring.

Interesting....it was cool seeing it after hearing so much about it.
One question...was the glass big or does not make a whole lot per brew???

The Aeropress works best when you use less water than normal and make a
concentrated shot, then add water to obtain a customary concentration.
Three points.
- Some origins taste great full strength in the Aero, and in the case of
acidic C+/FC roasts it tastes great all the way down to room temperature.
- You can use more water than the directions call for. However, do not use
more than twice what's recommended unless you coarsen the grind.
- Use hotter water for lighter roasts.
