Topic: How important is quick cooling after roasting? - Decision (14 lines)

OK, thanks to everyone who offered advice and experience, especially to Scot Murphy.
Based on the feedback I'm going for the Gene Cafe. If a quick cool down is not that critical, then being able to changethe temp during the roast is the selling point over the Hot Top.
I'm going to be in San Francisco in mid-July. I plan on stopping by Sweet Maria's in Oakland and picking it up then.
