I roasted my first batches of Horse Harar to ~ city/city +, the other
day, and was happy with the blueberry notes and the taste both 24 and 48
hours post roasting. Today, day 3, it tasted sour--or just off in some
way. I tried it in my moka pot, after being disappointed in it with the
KMB, and it was worse.
Now, it is allergy season here, and my taste buds might be off, but I'm
thinking that it is more than that.
I had a similar experience with Ghimbi, and found that the next day
(that would be 4 days post roasting) whatever was happening had settled
down, and the coffee was, while not the best cup of coffee I have ever

I roasted the same bean this AM, but took it a little darker, in the
neighbourhood of full city.
