Topic: Coffee Experts (19 msgs / 1508 lines)
1) From: Ed Needham
I'd make this list to start...
(no particular order, and 'many' left out)
Tom Owen of Sweetmarias
Don Schoenholt of Gillies Coffee
Doug Zell of Intelligentsia
Barry Jarrett of Rileys
Dr. Ernesto Illy
Erna Knutsen
If I had these people in a room and asked a question about coffee, any
question, I'd say I would get a correct answer.
Coffee is such a complex product that the term 'expert' needs to really be
specified as to what area of coffee they might be an expert in. Buying,
cupping, roasting, wholsaling, retailing? In 1996, Kenneth Davids was
awarded a "Special Achievement Award for Outstanding Contributions to Coffee
Literature" by the Specialty Coffee Association of America (SCAA). I'd say
he is an expert on writing about coffee.
I've met Kenneth Davids a couple of times and although he seems like a
pretty good guy, he didn't strike me as someone I'd long to sit down with to
pick his brain about coffee.

I've always had a respect for Ken David's work. I think his contributions to
the world of coffee are admirable.
However, if he is stating that the average roast at Starbucks is a FC/FC+
then I have to rethink that assessment. Seriously, I have never seen
anything but at least a Vienna and that was one of their special light
roasts.
In my mind one of three things must be happening: If he did indeed say this
then: a) he is regurgitating the company line without personal
verification, b) he does not know the difference between FC and French or c)
he is knowingly spreading misinformation.
Of course a fourth possibility does exist. He did say it and it is true. In
this case Starbucks is getting some unusual beans that come out that black
and shiny at FC+.

Also Davids groups the Roast Styles with the Common names "Viennese", =
"Full-City", "American" and "Regular City" in the same category.

And characterizes this roast level as follows:
Roast Color: Medium-dark brown
Bean Surface: Faint oily patches to entirely shiny surface
Approximate bean temperature at termination of roast: Between 445F/230C =
and 455C/235C

So according to his characterization, the full shiny surface would be at =
the high end of this roast which is consistent with some Starbucks =
coffee roasts.

Believe what and whom you will. Any lumping of American, City, Full City,
and Viennese in the same roast category illustrates lack of expertise not
expertise. But in truth though it's been a number of years since I've read
that particular book I don't recall Mr. Davids saying those different roast
names correlated to the same degree of roast, though since you seem to be
reading it now he may have. Regardless, as has been pointed out by many, Mr.
Davids is a coffee writer not a Roast Master by any stretch of the
imagination. A coffee writer not a coffee roasting expert.
I've learned and continue to learn far far more from this List and other
active coffee roasters than I ever have or could from the very rudimentary
at best book on home roasting authored my Mr. Davids.

Also Davids groups the Roast Styles with the Common names
"Viennese", "Full-City", "American" and "Regular City" in the same category.

And characterizes this roast level as follows:
	Roast Color: Medium-dark brown
Bean Surface: Faint oily patches to entirely shiny surface
Approximate bean temperature at termination of roast: Between
445F/230C and 455C/235C

So according to his characterization, the full shiny surface would
be at the high end of this roast which is consistent with some Starbucks
coffee roasts.

discussing Roast Styles and Flavors:

I've always had a respect for Ken David's work. I think his
contributions to the world of coffee are admirable.

However, if he is stating that the average roast at Starbucks is a
FC/FC+ then I have to rethink that assessment. Seriously, I have never seen
anything but at least a Vienna and that was one of their special light
roasts.

In my mind one of three things must be happening: If he did indeed
say this then: a) he is regurgitating the company line without personal
verification, b) he does not know the difference between FC and French or c)
he is knowingly spreading misinformation.

Of course a fourth possibility does exist. He did say it and it is
true. In this case Starbucks is getting some unusual beans that come out
that black and shiny at FC+.

Indeed! Been using sweetmarias.com and this mailing list more and more. =
Perhaps Tom will get into some book writing? (Wait - that's what the web =
site is for - who needs a publisher these days!)

I find this kind of funny. In my eyes those levels represent pretty much

I have met Davids twice now, and that has been my impression both
times. "Well, that was kind of funny". Both times it was like he was
discussing a twilight zone aspect of coffee - I understood all the
words, but it was just a little off and kind of weird. Once was a
pseudo cupping at the SCAA convention - the way he was describing the
coffee bore no relation to the stuff in my cup. At least in Tom's
reviews I have an inkling of what he tastes. In one of the cups, he
was nearly swooning over it, and all and others at my table got were
wet, carbony cardboard flavors. The other time was much like this
talk on roasting - I knew the words, but it their meaning were all mixed up.

I asked Ken about that once... Actually, I asked Ken and Ted Lingle to
compare and contrast their styles of cupping. Ken's answer was that,
his was an "experiential" form of cupping, while Ted's was more
analytic. Ted didn't disagree, nor did he find fault with Ken's
methods.
Ken's is a romantic's approach to coffee... And that much he and I
share. He's enthusiastic about those qualities that he likes;
indifferent to those qualities he doesn't. Which is all well and good
if you share the same proclivities of palate. (For the record, in a
great many ways we don't.) ;)
I once suspected that Ken just "upped" the numbers on his reviews...
that he used a rather steep curve. On further review that turned out
not to be the case. In fact he's quite critically panned coffees that
I'm particularly fond of.
In the end, I have to conclude that while our approaches are quite
similar to tasting coffee, our sense of appreciation for coffee's many
and diverse qualities are quite different.

P.S. What's the preferred method of reply...? Top or bottom-post? I
haven't played here in a while. ;)

Hey Doug! Glad you're still alive and kicking. It's been a while.
I think there is likely a professional courtesy given to Mr. Davids from
cuppers who do it for a living.
I think bottom posting is preferred.
