Sweet. I don't think I previously realized you'd mod'd to cool and roast
simultaneously. Now that's something I can't do with the Rosto! (Well, could
if mannually dumped hot roast and externally cooled rather than in chamber
cooling as designed)
Assuming those ~bean temps are in 1min intervals, looks like you're
profiling your HotTop about 20-25% faster than stock times. Resulting
livelier cup? Fascinatingly that particular profile is nearly identical to
my Rosto slow profile I use for espresso blends, wild Kenyas etc.
