I disagree. Some coffees brewed way down around 195f can be very flat or
even sourish and really shine above 200f, sometimes as high as 206f or so.
Genereally speaking a lighter roast will be better at a higher brew temp.

Your are right on Mike!  Yesterday at my normal 201 the Horse was a
sink shot.  At 203.5 my top end where I have my pressurestat set,
produced a drinkable shot.  I guess I have gotten more fussy in what I
consider a good shot.
