in order to control the power better, could I use a dimmer switch control  to 
adjust the time of roast w/out damaging the unit. less power longer  
roast..........right?

You have to split the circuits on a poppery2 to do that because the heating 
coils and the motor work together to produce the right voltage for the 
motor.  It's not a simple dual circuit like a poppery (1).  On a poppery 
(1), if it's too hot, you can use a hi wattage dimmer for the heating coils, 
or bump up the voltage on the fan with a variac.  Circuit mods are all 
that's necessary with a Poppery (1).
