Was going to wait 'til tomorrow to test another shot but it started talking
to me so @51 hours rest ground (hoping) for a ristretto. Decided to start
pull a hair lower temp too, 202.5f target. Nailed a gorgeous ~1.25oz 40sec
ristretto. It has really started to come alive, night & day from that zero
rest shot! Full range flavored smooth starting lightly smoky deep (from the
Aged Sumatra not the roast) while sweet but not too sweet, enter a bit berry
wine fruity, was that a touch of mandarin orange?, with maybe a hint of dark
chocolate? Hmmm, really need another shot 'cuz I'm terrible at describing
flavors but am going to wait 'til tomorrow and 3 days rest. It's turning out
to be a looooong wait for my usual 4 to 5 days rest for espresso peak
tasting! 
Yeah, I'll roast a few pounds of this blend for the Jam's machine benchline
comparisons no question. Initally mixed 5# with enough of all the beans used
for mixing another 10# or so which is good, 'cuz I
rrRRrreeEeeEaaaAAallLLllYyy think I'm gonna love this blend. Should make an
excellent cap' too.
