So would water quenching still help with cool more quickly? Or is it =
totally unnecessary with that setup?

I can't imagine needing to cool the beans much faster...they're cool
in about a minute.  I believe having the beans cool within 5 minutes
is best; always the faster the better, but there certainly wouldn't be
much call for faster than 1 minute cooling.

Yes, cool to the touch in a minute.  Cooler than they used to come out 
of my Hearthware Precision which ran its fan at high speed for 5 minutes 
to cool the beans at the end of a roast.  The problem is getting the 
turbo oven and spacer off the Stir Crazy and dumping the beans into the 
cooler.  Moving all those hot parts around takes some time.

I could probably rig something up to make that easier.  I had originally 
attempted to vacuum the beans into the cooler but the fan doesn't create 
enough suction.

I'm able to use the metal stand that came with the TO as a trivet of =
sorts - so I'm able to move the TO off onto that and then I set the =
alumnum spacer ring on top the TO on the glass part.  This takes all of =
5 seconds.  
I went to Lowes and they didn't have any thermal glue. Does anyone know =
what to buy and where to buy it?
 
Also, for those with the SCTO who use the digital therm, how do you keep =
it in place during the roast?

Go to an automotive store ... look through the tubes of Permatex.  This
stuff is used to make gaskets and you should certainly be able to find one
in the heat range you need.  I think there is a reference chart on the back
of the blister packs.  I have no idea about its food-safety qualities ...

Is the thermal glue intended to permanently mount the spacer?  Small screws
work well, 3 or 4 is all you need.  Take care to drill the SC sides with a
large enough drill bit; the plastic is brittle and will break if you try to
force a screw through it.
My thermo probe is a pointy metal shaft, ala BBQ probe.  It's shaped like an
"L", fits into a slot in my spacer, and dangle into the bean mass.  I find
it to be fairly accurate and very repeatable.  There's a few pics here;http://peter4jc.googlepages.com/.The latest addition, no pics yet, is my bean cooler.  A blower from a
discarded Hoover vac, mounted in a box, with the exhaust blowing through the
side of the box into a cotton bag (for chaff collection).  The switch from
the vac is mounted on the base for foot operation.  Works great, cost
nothing.  :-)

Also, for those with the SCTO who use the digital therm, how do you keep it
in place during the roast?

FWIW, I took a couple of dry-wall toggle bolts apart to create two prongs
that fit into holes in the spacer. Then I drilled a hole through the handles
on either side of the SC. I ran a small bolt through the hole and into the
half a toggle bolt. This lets me clamp the spacer ring to the SC.
The probe makes a loop around a small sheet metal screw in the spacer ring,
then feeds in through one of the vent holes. The tip just rests on the bean
surface during the roast. When the roast is over, I remove the TO (to an old
stove top griddle), unplug the SC, pick up the thermometer and dump the
beans into a seive that sits ontop of my cooling box. The cooling box is
cardboard (amazon leftover) with a $10 walgreens fan zip-tied into the
bottom. Works like a charm.
