Topic: Throttling the Roast (11 lines)

A new Gene Cafe is on its way (its your fault Derek!) and I am excited about
having more control over the roast.  If I understand correctly, one wants to
ramp up to first crack quickly and right at first crack throttle back the
heat enough to coast along without stalling.  Is there a rule of thumb for
for the reduction of heat?  As always, any help is greatly appreciated!
