I forgot to mention that I roasted 1/2 pound of Gesha. When I brewed my first cup this a.m., it was all it was supposed to be--wonderful, unique. It was however like listening to a fine Bosendorfer grand piano with the lid down--high frequencies a bit muted. I think this was because of the (essentially) drum roasting and the fact that I did let the 2nd crack start before ending the roast...better next time!
take care!

So when I roast my geisha I should keep it out of second crack?
I only have 2# of it and I want to make it the best I can.

You may benefit reading Tom's roast recommendation, Panama Gesha now found
in the archived coffees: http://www.sweetmarias.com/coffee.reviewarchive.l-p.html"Roast: Pungent roast flavors of 2nd crack do harm to what this coffee is
really about. This is a "2nd Crack is Taboo" coffee. Try to get it to a
City+, or a Full City, without letting it hit 2nd crack at all. It is a
large bean, you might need to cut back on the batch size a little. It has a
patchy surface color - don't worry about it. Just grind, brew and enjoy! "

Ultimately the quest for Koffee Nirvana is a solitary path. To know I must
first not know. And in knowing know I know not. Each Personal enlightenment
found exploring the many divergent foot steps of Those who have gone before.
