Great recipe for palacsinta.  Literally one of my fondest childhood
memories is eating them warm as my mother or grandmother made them.
My favorite fillings were either cinnamon sugar or apricot jelly.
Some folks enjoyed them with a poppyseed filling. Some of the cooks in
my family have taken to adding a splash of soda water or 7 UP to the
batter to make it even lighter.  We also "rest" the batter in the
fridge for a couple of hours as you do for the pancakes.
