Topic: A little on the cool coffee subject (17 lines)

We've discussed here how brewed coffee flavor changes as it cools.  
I'm drinking some of the recent Sidamo, which I love, roasted just to  
FC, and must say: it tastes better as it cools. Right out of the pot  
(vac), it's oddly thin, a little watery, if that makes any sense. As  
it cools, though, the flavor fills out, becomes broader, just plain  
yummier. I also have to say Tom was really on target with the  
"herbal" description. It's like a mild melange of sage and thyme and  
marjoram, a hint that accents the fruitiness. Terrific!
