Topic: Don't Look Now...Brazilain Cachoeira 'bout Out (39 lines)
1) From: David T. Borton
For those who haven't tried it, you might want to slip an order in
really, really soon. The inventory is running low.
I had never worked with a Brazilian bean before. Relatively new to the
home roasting gig. I had been disappointed
with Brazilians that I had bought over the counter, roasted.
Oh, my. Delicious bean, wonderfully used as a base in blends, at FC+:
Brazil Organic Cachoeira Yellow Bourbonhttp://www.sweetmarias.com/coffee.southamr.brasil.htmlYesterday I roasted this Brazilian as well as a Sumatran and a Rwandan,
50/25/25 ratio. It lacked the punch of sweetness.
I re-looked the beans and my notes this morning and I hadn't gone deeply
enough into the Brazilian. Heavens.
Back to the roaster, quickly do up 5 oz of the Cachoeira this morning,
but to FC+ this time. No time to de-gas. Re-blend with the new
Brazilian....
Ah, heavenly. Hit it just right.

--
Lord, it is time. The summer was very big. Lay thy shadow on the sundials,
and on the meadows let the winds go loose. Command the last fruits that
they shall be full; give them another two more southerly days, press them
on to fulfillment and drive the last sweetness into the heavenly wine.
- Rainer Maria Rilke
