I've had the Bolivia after a short rest - heck, I've had plenty cups 
right after I roasted (couldn't stand the wait). I've made it after a 6 
hr rest (only because I forgot to roast until about 1 am).
It has more of a 'bite' if you drink it right away, but it is still 
very good, IMO.

Thanks everyone!  The Timor was a hit this morning along with some Mexican
Organic Oaxaca Finca el Olivo that was found hiding in the coffee hutch; it
was roasted three weeks ago.  It was surprisingly good for three weeks old.
