All this talk about rest..... Just roasted the Gesha to a nice C+. Any
experience with rest on this one? Tom (Ogren), just an FYI- that Guatemala
Antiqua especial is a GEM!

Three days  I tasted day one - seven.  Day 4-7 were the best.  Day three was
a dramatic increase in complexity, depth of flavor and smoothness.  Day one
and two were disappointing!

I am now on day 6 and found more earl gray in the first 2 days and  
some really interesting flavors immediately after roast,  Depending  
on how much you roasted, my advice would be to see how the flavor  
changes over the next couple of days.  I am noticing more acidity in  
days 4-6 than in days 1-3.  I might lose some CSA points for this but  
I only brewed 1 cup.  Equal parts of kenya gethwumbwini/panama gesha/ 
a nice brazil bourbon.  I never have good luck with blends but the  
complexity of this cup was awesome
