Two different coffees, two days in a row, both of them had lemon in the
cup!
Yesterday, I had the Nicaragua Matagalpa Placeras Estate Miel.  When the cup
was hot, it had a distinct lemon zest taste that upon the first breath after
swallowing changed to suttle but present black pepper.  Exquisite!
Today, I am having the Ethiopian FTO Yirgacheffe Oromia Coop.  It has a
wonderfully present, but not overbearing, lemon accent to the cup that
persists as the cup cools.  Again, exquisite!  This one is still available
...

I roasted the Ethiopia FTO Yirgacheffe Oromia 5 days ago.  I first  tasted it 
after 3 days of rest, it was OK.  This morning, after 5 days of  rest, I 
brewed another pot.  WOW, it blew me away, GREAT coffee.
