Topic: Foodsaver Vac (22 msgs / 473 lines)

There has been a good amount of discussion on the list regarding the
benefits of vac storing greens and roasted beans. I stopped by my
local Tuesday Morning and saw several Foodsaver 730 (or 703) machines.
On the box it says that the machines can be used to vac Mason jars,
but it didn't say whether the needed tool was included. The machines
were selling for $40.
Are there important differences between different models of Foodsaver
machines? If there are, what should I be looking for?

I've been vac sealing for a few years.  I believe the latest model  series, 
the 2400 (which I now have)  is the best.  It costs about  $120, but I feel 
it's WELL worth it.  It's well designed (doesn't use the  sealer when you vacuum 
seal in a canaster or jar, saving the sealing strip for  what's it's intended 
for).  I don't think the jar sealer is included  with this series, but the jar 
sealers are well worth the investment,   At Target the cost for the jar 
sealer (small and large) is about  $10.00..  I vacuum seal everything, I use it 
about 10 times a day, couldn't  live without it.  ....Dorothy

Brian,
I am not the foremost authority on Foodsaver, but I did buy mine at Tuesday
Morning.  For $40.00, if it breaks, I'll get another one.  The mason jar
sealer is an "Add-on", but the only thing you want to make sure the
Foodsaver has is the "Accessory Port" for using things like the mason jar
sealer.

The handheld is great if only using FoodSaver for cannister vacuum sealing.
Kind of worthless for countless other food longevity uses via vac bags
though.

  CostCo sells the FoodSaver model V2490 for $125 - is that overkill or
really worth the price?  What I have in mind is the combination of bag
sealing for freezer (primarily meat, some prepared meals, and both green and
roasted coffee beans) plus some canister/jar sealing.  Are there other
models that will handle the job for less $$?

That's the model I bought. It comes with one canister (50 oz).
It works very nicely, hands free and all.
I had to go to Wal-Mart to get the Mason Jar attachment, but that works 
well too. There are two possible sizes for Mason jars, I got the "wide 
mouth".
Now I'm still looking for the marinating attachment.

The Costco packaged FoodSavers tend to be very good mid-level models with
many advanced features not found on lower end models plus some included
accessories. Looked up the Costco V2490 pkg and I'd say given you plan to
actually use it and the feature set yes worth the $$$ IMO. In comparison
similar machine with one less feature option and without Costco accessory
pkg is $179.99 direct from FoodSaver website (model V2840).
That said there are lower end models that may serve you just fine. Things
you want is variable sealing time (on that model two timings by selecting
moist or dry food versus lower end models single sealing time don't do as
well like with really moist or watery food like fresh fish, and compared to
even higher end Pro models like mine which are continuously variable up to
5sec), nice feature removable drip catch tray for cleaning, accessory port
mandatory to have for cannisters/bottle tops/mason jars, bag cutter you'll
wish you had if not on lower end model, integrated bag roll storage mucho
convenient, hands free operation on that model not on lower end models and
can be a PIA (my first FoodSaver was not hands free).
You can either drive yourself nuts comparing every feature of half a dozen
plus FoodSaver models, weigh in the value of included Costco accessorty pkg
items, and likely end up getting it OR just go get it!
FWIW this morning took a FoodSaver vac bag frozen 5-1/2hr apple/maple/pecan
smoked rack of babybacks out to finish grill for dindin:-) FoodSaver and low
& slow Q, gotta love it!
And of course popped the dome tops on vac'd mason jar roasts of Kona Pau
Hana, Australian Skybury and Brazil Yellow Bourbon today too:-)

You didn't got it! Note Larry stated plans are to use the FoodSaver to seal
foods, which happens to include but not limited to coffee. I don't know of
any other gadgets or gizmos which do a better job keeping freezer burn away
from meats, poultry and fish or keeping cheese from molding in the fridge or
keeping once opened jars of nuts fresh many times longer (vac and frozen
nuts excellent for years) or etc etc etc.

I'll just add one very nice feature of any Costco features: save the 
receipt (you might want to make a photo copy, too, because they tend to 
fade after awhile (do I sound like a veteran or what?), and then return 
it months from now, or even years, if you find you don't like it. 
Seriously. It's the only reason I keep my Costco membership (that, and 
the free samples - hehe - just kidding)

Like you, I love my Foodsaver (V2490 from Costco).  I keep it on my  counter 
and use it several times a day.  
 
In the process of helping my daughter move, I found some vac sealed roasted  
coffee beans I had sent her a few months before that.  They had fallen back  
in the cupboard so she didn't know they were there.  They were sealed  in the 
Foodsaver bags.  When we ground and brewed the beans, they were  delicious 
(tasted fresh, lively, aromatic, etc.).
 
Anyway, your right about keeping things fresher, longer using this  machine.  
I also prepared some ribs to smoke (Kansas City sweet and smoky  ribs).  Vac 
sealed and froze the extra ribs after marinating and putting  the rub on them. 
 When I defrosted and grilled them, they tasted like  I had just prepared 
them that day, love this machine.

I bought one in July because of the talk on this list.  I used up the
bags that came with the machine within 10 minutes vac packing all the
wild salmon we bought at Costco.  We bought a small chest freezer this
year to take advantage of the fantastic NW berries.  We use it for
grated cheese.  Before this, we had to eat it up fast, now it lasts
forever. I just leave several inches of extra bag material, use what
we need and reseal.  We have raisins in the containers and they are as
fresh as the day we bought them.
I give people samples of my home-roasted as I'm not sure if they will
brew it during it's optimal time.  If I've roasted too much and don't
sell it all, I've been vac packing it in KMB size packages and
sticking them in the freezer.
And this is only the start.

been using a foodsaver vac#550 W/wide mouth mason jar attachment since Feb.
for my green beans. I use quart (1 1/2#) and half gallon (3#) jars. Living
in MA. our weather is a bit of everything, especially dampness. So the beans
in glass jars and then vacuumed seems to be the perfect answer for storage
control. Opened a quart from Feb. last week and it seemed as fresh as when I
packed it. Has anyone had  bottles stored this way for a long period of time
using this practice? Any bad experiences with this method?

I vac seal most of my beans in bags for similar reasons - Colorado tends =
to dry out everything and the vac sealing keeps the existing moisture at =
perfect levels. Leaving the beans in original bags or transferring to =
cloth appeared to contribute to lower 1st crack sounds. Never had any =
mold or other issues, even when using beans from several months prior.

I use hard vac'd bags. One reason would have taken a whole bunch of jars
back when stash over peaked at 63 different greens weighing in slightly over
250#!!! Looked into buying a bunch of 1/2gal jars at one point, but just
stuck with bags.

Don,
Into bricks, I want them unable to express moisture into my 
basement. Unless I break the bag seal, or tear the bag they are 
good for months.
I usually make up a label similar to the original from SM and 
include it in the bag. Then I store them in a multi tray 
pull-out bin unit. Makes it easy for me to see inventory (each 
bag is weighed out at 1/2lb) and easy to snip and pour into my 
Gene Cafe.

I do exactly the same thing all the way down to pouring into the Gene Cafe.
There is an additional visual advantage to making them into bricks ... if
one develops a leak, it will go soft and have a smooth exterior.
