Actually if the jar isn't jostled doesn't matter if the ring is a bit loose.
CO2 is heavier and displaces lighter gases, ie oxygen. Hence the roasted
beans stay surrounded by the inert CO2 rather than oxidizing from oxygen.
Theoretically the dome could even be taken off, but that would require zero
air movement in the room.

You could always can your coffee while drinking beer too.  When you have 
to burp, burp into the mason jar, that way the carbon dioxide displaced 
by your gizzard will land on the beans and displace the oxygen.  If you 
burp hard nuff you might even expel some gastric juices in with the 
beans and start the beginnings of your own kopi luwak type of blend.
Call it the Gizzard Grind... it's  Gastrolicious!
