Is it a single 1 oz in 25 seconds or 2oz in 25 seconds?

Yes to both as "target" not "set in stone" standard shot parameters. Of
course using single or double basket respectively for a single or double
shot.

Usually I do latte if doing espresso so the fineness of the shot is a
bit hidden/diluted. I have no comparison to what a great shot should be.
I did a 10 second pull (oops) but it wasn't bad (or was it). Lots of
flavor. I grinded finer, as fine as my whirley would go (rocky arrives
Monday) and tamped with my makeshift tamper as hard as I could and got a
25 second pull. First taste, wow, lots of flavors but, I suspect it is
too sour.

I am guessing this is not the best bean for espresso, not the best
grind, it could rest another day and should be roasted a bit darker.? I
roasted it for drip though and it is what I had. My KRUPS 964 (any input
on this machine anyone? Link below) gives me 196deg when measuring the
water coming out of the basket with no grounds.

The best thing you can do while still trying to grind for espresso with a
whirly chop is STOP and walk away from the espresso machine! While waiting
for Rocky to arrive spend some time, copious time, reading up on espresso
over at www.home-barista.com.
Those low end Krups pump espresso machines are capable of "ok" shots, but it
takes some work and practice and having everythng else just right. But you
don't have a coffee beans chance in 3rd crack of producing anything
resembling consistent good shots with a whirly chop. A properly fitting
tamper is a requirement too, but less critical than the grinder.
