I will start with my Signature... Cheers, Brett...
So how do we do it?  Specifically, how do we go about roasting coffee,
brewing coffee, or making Espresso?
Here's the results of a simple survey we entertained these last two days.
We had a total of 51 respondents.  Some gave me simple responses of A, or
B.  Others added a C and gave their explanation.  Some elaborated, because
their method didn't really fall neatly one side or the other.
Here's the Direct Results:
  When Roasting Coffee, I mostly Number Percent  a. Carefully measure
quantities, amounts, temperatures and times to maintain a very controlled
profile
23 45%  b. Roughly follow a regular process with similar quantities,
amounts, temperatures and times to roughly arrive at similar roast results -
not all that measured or scientific in my approach

 When Brewing, I mostly
 a. Carefully measure quantities of bean, carefully control the grind,
managing temperature to produce the perfect pot

temperature to roughly produce the pot like I am used to

 When Pulling Espresso, I mostly
 a. Carefully measure quantities, amounts, temperatures and times to produce
a perfect shot

Still, the comments were fascinating.  I am pasting them here, in no
particular order.  Names have been removed, so you can think through the
