Ah, you must be recalling the discussion from late spring early summer '04
before PNWGII! I decided to try and capture some of that great going into
1st through early 2nd roasting smell with the Traeger. Mixed in some greens
pre roasted to tanning stage with mild smoke Oak pellets. Figured to pre
roast to tan to avoid the early "green" roast stage smell. Worked ok but not
quite what I was after. Since obviously no way to "stop" the roasting stage
into 2nd the more pungent roast smoke smell of 3rd crack and beyond
predominated the more delicate earlier stage coffee smoke fragrances. Didn't
try it with a brisket and likely won't.
