I've had my Chemex for a few weeks, and have been very happy with it.  =
But
yesterday it clogged when brewing my first batch of Mexico Organic =
Chiapas WP
Decaf (after 2 days rest).  
I used the same grind setting on my Rocky as always.  I usually brew half=
 the
capacity of my Chemex, but for the first time went for 3/4 capacity.  =
From the
very beginning the water flowed incredibly slowly.  After a very long =
time, when
I had brewed barely above 1/2 capacity, and the water was barely =
dripping, I
gave up & poured.  I had tried stirring the liquid in the top part of the
Chemex, but it made no difference.
The resulting brew looked clearer than usual.  It had a nice sweet almost
chocolately flavor, but no complexity.  It just didn't taste fully =
developed.
I had roasted the beans in my FreshRoast+8.  I was attempting for City+, =
which I
think I achieved ... first crack completed for a short time.  I stopped =
the
roast when the aroma was unbelievable ... very sweet.  But the beans =
looked
mottled, lighter than expected, and smaller than expected.  Does this =
sound like
the beans reached C+?
Would underroasted beans cause the Chemex problem?

The only problem is you need to increase your grind size a bit or get a 
grinder that doesn't produce much dust.  If you brew to full capacity, the 
coffee won't be as good.  I brew about 32 (liquid) oz with 2 (dry) oz. of 
grinds.  That takes it up to just under the first button on the side of the 
carafe.  I wet the grinds to allow the 'bloom' to settle and get the grinds 
ready to extract their full flavor.  Then I pour slowly up to almost the top 
of the filter.  I let that subside almost all the way and refill to near the 
top again.  If I need more coffee, I brew twice.
Once in a while the filter moulds into the vent/pour spout and cuts off the 
air, resulting in a very slow trickle.  If that happens, I just twist the 
filter a bit to open the vent hole.  Sometimes I have to do it a couple 
times.

My grinder is a Rocky, so dust shouldn't be a problem.  But I'll try =
increasing
