I cannot get over its silky - chocolate character!  What is your favorite
blend with this coffee?  The cup I am drinking right now, suggests that
there may be something that I can add and push it over the edge into a
chocolate-raspberry truffle, but I'm not sure what would do that ...
possibly Fraijanes ...

My favorite was the Yemen Ismaili for a Mokha/Java blend
but that doesn't help much. It may go well with the Yemen
Sana'ani. Just guessing I would try it with Idido, Lekempti
or DP Sidamo.

I do variations on that; what I look for is a Panama with plenty of acidity.
The Carmen Estate was great for this. Next time I do the PBJ, I'll use the
Organic Los Lajones. I'll be that a winey Kenya would also be nice.
For a Brazil, I like to use I pulped natural bean; preferably a Bourbon
varietal.
In addition to Java, I like a Sumatra in this blend.
Roast levels generally are to keep the Panama light, not more than C+. I
like the Brazil at FC and the Indo @ FC/FC+
Blend ratios have been all over the map for me: equal parts of all three is
nice, but I have settled on 40% Brazil and 30% of the other beans as my
starting point. I tend to keep the Brazil constant and adjust the other 2
beans.

I like a blend of Sumatra, Mokha and Java.  Right now what I am drinking is
about 4 parts Sumatra Iskandar triple-pick, 1 part Yemen Mokha Sana'ana and
1 part Java Government Estate Djampit.  My favorite with this blend was last
year's Sumatra Volkopi Supergrade, Yemen Mokha Ismaili, and Java.
