Topic: Nicaraguan El Cipres CoE #3 (9 msgs / 228 lines)

Has anyone roasted the Nic. El Cipres CoE #3, what have the results been?  I
just finished my 2lb stash (only roasted 1lb correctly, first lb I charred
--> learning curve w/GC).  I really enjoyed this coffee once I got it
right.  It has a nice brightness (definitely red grape skin-ish) that is a
good change of pace from the Colombian and Ethiopians I usually drink.  The
best way for me to describe the cup, and I know I'll be blasted for this, is
like a cup of Dunkin Donuts coffee on steroids.  Similar taste but whereas
the D&D tastes flat, the Cipres really grabs your attention.  Tom was right,
City is where this bean shines. My first roast was to FC, while still good,
there wasn't as much fruit flavor (green apple and a tad of citrus).  My
second was to City.  I didn't like this bean at first but it gradually grew
on me. I can share roast logs w/anyone interested.
BTW, three of my co-workers also thought it was amazing coffee.   I told
them to help themselves to my coffee setup at work gratis (hand grinder,
water boiler, one cup manual drip).

i have roasted this and i prefer the darker roast FC with a five day rest  
imho this coffee was way to bright for me, not that it is a bad coffee its  
really very good when its not so bright. i roasted with HG/DB for 20min the bean  
temp was 437 w/ infrared thermo.

I really enjoyed this coffee.  I knew it was gonna be good when I smelled
green apple in the aroma of the roast ... I roasted it to City ... very
pleasant cup of coffee!

Eddie,
The FC was not as mellow as the City cup.  The FC cup had more bite to it
(bitter?) and the red grape skin stood out strongly.  The city cup
flavors seemed to balance with each other much better.  The full city is the
first batch of the (2nd file) listed in my blog (see signature
below) (though it says City, it needs to be corrected) and the 2nd batch is
the City description.  The best way for me to describe this cup is Dunkin
Donuts coffee on steroids/speed.  The flavor is much more intense and wakes
you up.  This coffee really grew on me and impressed me more each day,
especially at the City roast.

This is a multipart message in MIME format.
I just roasted the last of this, and much darker than I would have
preferred. I dumped at around 440F, hoping for a FC+, plus someone stopped
by, and it kept roasting in the colander.  It went to prolly a Vienna roast.
I let it sit 4 days, and it was amazing. All the fruity flavors came out!

I was surprised, the first time roasting this bean I didn't know what I was
doing and came up short of 1st crack.  Yuck!  I did this twice and wasted
1lb of a 2lb order.  The next 2 half lbs were roasted to FC and C and were
really good cups.
