I really can't identify with the City roast scale and think more along the
lines of time, temperature, sound, and smell. I started learning using a
WhirlyPop (after my attempts to air roast failed miserably) and never saw
the beans until they were dumped. Generally, I do a two step temperature
ramp to first crack in about ten minutes and stretch another five minutes to
second. A bit into the second the sweet smoke starts and I dump and cool in
quick fashion.
My roasts are in a solid drum. There is some discussion among folks using
similar apparatus about the rest characteristics being less pronounced. I
share that opinion, however, the peak desirable flavors are between three
and twelve days post roast for me.
