Lauren,
Welcome!
What heat source do you use for wok roasting?
Brian

Brian,
I have been using a side burner on my gas grill. The challenge is in
keeping the roast from going too quickly, as it is easy to have it go
from first to the second crack without hardly any time in between.
Like some of the DB roasters, I have found it easier to roast a
larger batch than smaller to help control the heat.

Sounds like you are finding methods that work with your equipment in your
environment. Glad to hear that you are enjoying roasting.
